Easy Appetizer | Bruschetta

What is it about having appetizers before dinner that makes it feel like it’s a little more special? The other day we decided that we would make some of this simple bruschetta to serve before our dinner. Honestly, it was absolutely delicious and was so quick to make for our family dinner.

I remember growing up I never even wanted to try bruschette because I am not a big fan of tomatoes. The texture does something to me and makes me not want to eat them. But matured a little and became a fan of salsa so I decided to give it a try. I am glad I did, but I don’t want to have to go to fancy restaurants just to be able to enjoy these tasty treats. Is it weird that these are now a treat to me?

Bruschetta is great because it’s pretty healthy since it’s just veggies, olive oil, Mozzarella on a thin slice of bread. But I guess when you are throwing a few (maybe 14) back it’s not so healthy. The great thing is though, you won’t feel bad for eating them and they aren’t the most filling thing which is great, since they’re an appetizer.

Ingredients
  • 3 large tomatoes, seeded and chopped
  • 2 cloves garlic, minced
  • 1 to 2 green onions, chopped
  • 2 teaspoons olive oil
  • 3 Tbls fresh basil, chopped
  • 1 thin French bread baguette
  • 1 cup grated Mozzarella cheese
Instructions
  1. Combine tomatoes, garlic, green onion, olive oil and basil, set aside.
  2. Slice bread into thin slices, place on a cookie sheet and sprinkle with cheese.
  3. Toast under broiler until cheese is melted and light golden brown.
  4. Remove from oven and top each slice with a little tomato mixture. Serve immediately.
