Delicious Frozen Huckleberry Pie

When I was little we had a sandbox that I would play in for hours. I was always making water parks, racetracks and the ever so classic, mud pie. I made the best mud pies in the west, or so I thought. Now that I have grown up, and know what a mud pie is, I have found a new and improved mud pie that will blow your mind: frozen huckleberry pie.

If you are looking for a deliciously refreshing treat to cool you and your family off, this mud pie is the perfect treat. When I heard that local Associated Foods grocery stores (Fresh Market, Dans, Maceys) had their own brand of ice cream I had to try it out. Their Red Button Vintage Creamery ice cream will blow your mind. With so many different flavor choices it was hard to decide what would be best, but I had to grab the Huckleberry Pie.

This ice cream has made my life a whole lot easier with it’s delicious flavors, but also with it’s great price. Now, take the ice cream, throw it on a graham cracker crust and top it with Cool Whip and berries and you have yourself a delicious huckleberry mud pie that everyone will love this summer.

If you are looking for a refreshing summer treat that will cool you off, this huckleberry pie is perfect.
Ingredients
  • 1.75 qt Vintage Red Button Creamery Huckleberry Pie ice cream (softened)
  • 1 package Graham Crackers
  • 4 Tbls butter (melted)
  • Cool Whip for top
  • 1 c berries
Instructions
  1. Place graham crackers in food processor for crust. Once they are chopped up, mix in a bowl with melted butter until completely coated.
  2. Put graham cracker mixture into a 9 x 9 (square pan) and press down to make crust.
  3. Once your ice cream has softened, pour over the crust and spread evenly. Put in freezer until hard.
  4. Once ice cream has hardened, remove from freezer and top with Cool Whip. Put back in freezer and let harden. When ready, top with fresh berries and serve.
