The texture of chia seeds takes a little getting used to, but they are a great protein-packed addition to many recipes because of their ability to thicken and gel, so why not make chia seed pudding.

When you need something to satisfy your sweet tooth, but aren’t eating sugar chia seed pudding is the perfect treat for you.
Ingredients
  • 1 can coconut cream
  • ½ cup chia seeds
  • 1 tsp honey
  • ½ tsp vanilla
Instructions
  1. Put ingredients in mason jar.
  2. Close jar and shake well until all items are mixed evenly.
  3. Place in fridge over night (or at least 3-4 hours). Open and enjoy.
  4. Top with fresh fruit, cinnamon or chopped nuts.
  5. *If you feel the pudding is too thick, add some coconut milk.
