Meat loaf has never been a popular meal in our home. My son likes to have something new and different, but a loaf of meat isn’t going to get him eating dinner. Rap that loaf up like a mummy and suddenly all things have changed.

We love Halloween around our house. As a matter of fact, we decorate for Halloween around our house during September. We love the decorations, but enjoy most the process of finding our family themed costumes for the fun holiday. Last year we were a circus and this year we have a new addition and are excited for our Halloween theme we will be as we trick-or-treat.

Need an entree to trick your kids into eating before they go trick-or-treating? Mummy meat loaf is the perfect solution.
Ingredients
  • 2 pounds ground turkey
  • 1 cup Ritz crackers, crushed
  • 1 egg, beaten
  • 1 cup milk
  • 1/2 cup ketchup
  • 1/3 cup onion, finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3/4 cup ketchup
  • 1/4 cup apricot preserves
  • 1 Tbsp Worcestershire sauce
  • 1 can Pillsbury breadstick dough
Instructions
  1. Preheat oven to 350 degrees. Coat 5×9 loaf pan with cooking spray and set aside. In a large bowl, combine the ground turkey, crackers, egg, milk, 1/2 ketchup, onion, salt and pepper. Mix together with your hands until thoroughly combined.
  2. Pour the mixture into the prepared pan and spread evenly. Place the pan on a rimmed baking sheet and bake in the preheated oven for 90 minutes.
  3. In a small bowl, combine 3/4 cup ketchup, brown sugar, apricot preserves and Worcestershire sauce. Mix well. Spread half of the mixture evenly over the meatloaf halfway through baking. Reserve the remainder of the sauce for dipping/topping.
  4. Remove meat loaf from oven and put breadstick dough on loaf as if it were mummy wrappings. Put back in over for 10 minutes, or until golden brown.
  5. Let meatloaf sit for 15 minutes before slicing and serving. Use Olive slices for eyes and enjoy!
