Lets Roll

Do you want to really impress everyone at Thanksgiving dinner? One way to do it is by making something that is a little more than a side dish, but definitely not basting the turkey. What dish could get people talking and going back for seconds, thirds and well, half a dozen more in my case. I’m talking about rolls.

Thanksgiving Dinner Rolls

This is going to be a little trickier than the side dish (what isn’t), but if you follow the directions exactly, you will have the best, easiest and most delicious rolls this side of your local bakery.

Like I said, it really is a simple recipe, but make sure to read everything before you start. Some steps that I tend to forget are:

  • Don’t forget to use scalded milk. I just throw it in the microwave for a minute, but just don’t forget it.
  • Make the mashed potatoes first. Then you will just have them on hand, ready. Simple if you use potato pearls.
  • Use warm water for the yeast, not hot.

If you can remember those things, the rest of the directions are a cinch.

Serves: 4 dozen
The tricky part about making rolls isn’t that they are hard to make, but time consuming. These rolls will blow your guests away by how delicious they are.
Ingredients
  • 1/2 cup warm water
  • 2 T. yeast
  • 1/2 cup oil
  • 2 cups milk, scalded
  • 1 cup mashed potatoes
  • 2 eggs
  • 1 t. salt
  • 1 cup sugar
  • 8 cups flour
Instructions
  1. Dissolve yeast in warm water (add 1T. sugar).
  2. In a separate bowl, mix liquid ingredients.
  3. Add yeast once it’s doubled in size and mix in dry ingredients (add flour slowly).
  4. Let dough double in size (about 45 minutes).
  5. Use 1/4 of dough and roll into large circle, about 1/2″ thick.
  6. Use pizza cutter and cut into pizza like slices.
  7. Brush with melted butter.
  8. Roll up pizza slices like a croissant. Place on greased pan.
  9. Cover; let rise until doubled in size (30-60 minutes).
  10. Bake at 375º for 12-15 minutes.
